Rosehip Syrup

Rosehips are the seeds pods of certain varieties of Roses.  They are also an excellent source of vitamin C, having 50% more vitamin c then an orange.  This syrup is great for colds, sore throats, kidney ailments and it tastes great over pancakes or French toast.   Rosehip seed oil is an healing and therapeutic oil for the skin.

Ingredients:

  • 1 cup fresh or 1/2 cup dried Rose hips. If they are fresh, cut in half and remove the seeds.
  • 3 cups water
  • ½ cup raw local honey (You can add more or less. Make it to your taste.)

Directions:

Bring to a boil and then transfer immediately to a thermos and allow to steep overnight. Vitamin C breaks down as the Rose hips are heated and boiled so we want them to only come to a boil and then transfer them.

When done steeping overnight, strain the Rose hips out of the syrup and place the syrup back in a sauce pan. Add the honey and heat gently until the honey is dissolved. Store in a refrigerator. It should last a few months refrigerated.
